Sliced Turkey, Tomato & Cheese Sandwich Melt

Uses: whole wheat bread, sliced turkey, tzatziki sauce, grape tomatoes, sliced cheese, romaine

Ingredients:

  • 2 slices whole wheat bread, or 1 slice for an open-faced melt
  • 1 to 2 tablespoons tzatziki sauce
  • 2 to 3 slices turkey
  • 4 to 5 grape tomatoes, sliced
  • 1 slice cheese, such as provolone, mozzarella, Swiss, or cheddar
  • 1 romaine leaf, optional
  • 1 teaspoon margarine or oil, optional, for toasting

Instructions:

  1. Spread tzatziki sauce on one slice of whole wheat bread. If making an open-faced melt, use one slice of bread and build everything on top.
  2. Layer sliced turkey over the tzatziki sauce, then add sliced grape tomatoes.
  3. Place the sliced cheese over the tomatoes so it can melt and hold the sandwich together.
  4. For a closed sandwich, top with the second slice of bread. Spread a little margarine on the outside if available.
  5. Cook in a skillet over medium-low heat for 2 to 3 minutes per side, pressing gently, until the bread is golden and the cheese melts. You can also heat it in a toaster oven or regular oven until melted.
  6. Add romaine after heating if you want fresh crunch, then cut and serve warm.

Chef’s note: This is a fun lunch melt, using tzatziki sauce as the sauce instead of mayonnaise or mustard.

Optional: Add avocado or feta if you want it richer or serve with a few orange slices for a lighter summer plate.
