Ingredients:

  • 4 ounces prepared meatballs
  • 1/2 cup pinto beans
  • 1/2 cup diced tomatoes
  • 1/4 cup diced Spanish onion
  • 1 small garlic clove, minced
  • 1 teaspoon oil
  • Paprika, cumin, oregano, and black pepper
  • Tiny amount of salt if needed

Instructions:

  1. Heat oil in a saucepan over medium heat. Add onion and cook for 3 minutes until soft. Add garlic, paprika, cumin, and oregano and stir for about 30 seconds.
  2. Add diced tomatoes, pinto beans, and 1/2 cup water. Bring to a gentle simmer and cook for 5 minutes so the flavors combine.
  3. Add the meatballs, cover, and simmer for another 5 to 7 minutes until the meatballs are thoroughly heated and the stew has thickened slightly.
  4. Taste before adding salt. Serve in a bowl on its own or over a small scoop of yellow rice.

Good for: A comforting, smoky tomato-and-bean stew that makes prepared meatballs feel like a completely new dinner.

Optional: Add a small amount of jalapeño with the onion if you want more heat.
