Ingredients:

  • 1 tilapia fillet
  • 1 small potato, cooked and sliced
  • 1/4 cup grape tomatoes, chopped
  • 1/2 teaspoon lime juice
  • 1 cup spinach
  • 1 teaspoon oil or butter, if available

Instructions:

  1. Season the tilapia with garlic powder, paprika, black pepper, cumin, or any favorite spice blend.
  2. Cook the tilapia in a pan, oven, or air fryer until fully cooked and flaky.
  3. Warm the potato slices in a pan or microwave. If using a pan, let them get lightly browned for more flavor.
  4. Mix chopped tomatoes with lime juice and a pinch of seasoning to make a quick tomato-lime salsa.
  5. Serve the fish with the potatoes, spinach, and tomato salsa on top or on the side.

Good for: A simple fish lunch that feels bright and fresh instead of plain.

Optional: Add sour cream with a little lime juice for a creamy sauce.
