Summer Cornish Hen & Asparagus Dinner Plate

Uses: Cornish hen, asparagus, tomato, cucumber, yellow rice

Ingredients:

  • 1/2 cooked Cornish hen, or 4 to 5 ounces meat
  • 5 to 6 asparagus spears
  • 1/2 cup cooked yellow rice
  • 1/4 cup chopped tomato
  • 1/4 cup sliced cucumber

Instructions:

  1. Season the Cornish hen with a little oil, salt, black pepper, garlic powder, onion powder, dried oregano or Italian seasoning, and a small squeeze of lemon juice if available.
  2. Cook the Cornish hen in the oven, air fryer, or covered skillet until fully cooked and the meat is tender. Let it rest for a few minutes, then remove the meat from the bone or cut into serving pieces.2. Cook asparagus in a pan with a little oil or butter until tender.
  3. Cook the yellow rice according to package instructions, then set aside and keep warm.
  4. Cook asparagus in a pan with a little oil or butter until bright green and tender, but still a little crisp. Season with black pepper, garlic powder, and a tiny squeeze of lemon juice or a splash of vinegar if available.
  5. Make a quick tomato-cucumber salad with a splash of vinegar or citrus juice, a little black pepper, and a tiny pinch of salt if available.
  6. Serve the warm Cornish hen, asparagus, and yellow rice with the cool tomato-cucumber salad on the side.

Good for: A balanced summer dinner with warm comfort, fresh vegetables, and a lighter herb-seasoned flavor that goes nicely with asparagus.

Optional: Add guacamole to the rice for creaminess, or a small spoonful of picante sauce if you want a brighter, saucier plate.
