Summer Cucumber-Tomato Beef Taco Bowl

Uses: ground beef, cucumber, tomato, yellow rice, picante sauce

Ingredients:

  • 5 ounces ground beef
  • 1/2 cup cooked yellow rice
  • 1/4 cup chopped cucumber
  • 1/4 cup chopped tomato
  • 1 tablespoon picante sauce
  • 1 tablespoon guacamole, optional

Instructions:

  1. Cook the yellow rice according to package instructions, then set aside.
  2. Cook and season the ground beef with cumin, paprika, chili powder, and garlic powder.
  3. Warm the yellow rice and spoon it into a bowl.
  4. Add the beef over the rice.
  5. Top with cucumber and tomato so the bowl has a cool summer crunch.
  6. Finish with picante sauce and guacamole if using.

Good for: A taco bowl that feels filling but not too heavy because of the fresh vegetables.

Optional: Add beans or cheddar for extra heartiness.
