Sweet Apple-Orange Breakfast Couscous

Uses: couscous, milk, apple, orange, kiwi

Ingredients:

  • 1/3 cup dry couscous
  • 1/3 cup water or milk for cooking
  • 2 tablespoons milk, plus more if needed
  • 1/2 apple, diced small
  • 1/2 orange, peeled and chopped
  • 1/2 kiwi, sliced
  • Pinch of cinnamon, optional

Instructions:

  1. Bring 1/3 cup water or milk to a boil in a small pot. Turn off the heat.
  2. Stir in the couscous, cover the pot, and let it sit for about 5 minutes, until the couscous absorbs the liquid.
  3. Fluff the couscous gently with a fork. If it seems dry, stir in 1 to 2 tablespoons milk.
  4. Dice the apple and orange into small pieces. Save any orange juice from the cutting board.
  5. Stir the apple and orange juice into the warm couscous so it becomes lightly sweet and fruity.
  6. Spoon into a bowl and top with orange pieces, kiwi slices, and a pinch of cinnamon if available.

Good for: A breakfast that uses couscous like a warm grain bowl with bright summer fruit.

Optional: Add cottage cheese on top for extra protein and creaminess.
