Sweet Apple-Orange Breakfast Couscous
Uses: couscous, milk, apple, orange, kiwi
Ingredients:
- 1/3 cup dry couscous
- 1/3 cup water or milk for cooking
- 2 tablespoons milk, plus more if needed
- 1/2 apple, diced small
- 1/2 orange, peeled and chopped
- 1/2 kiwi, sliced
- Pinch of cinnamon, optional
Instructions:
- Bring 1/3 cup water or milk to a boil in a small pot. Turn off the heat.
- Stir in the couscous, cover the pot, and let it sit for about 5 minutes, until the couscous absorbs the liquid.
- Fluff the couscous gently with a fork. If it seems dry, stir in 1 to 2 tablespoons milk.
- Dice the apple and orange into small pieces. Save any orange juice from the cutting board.
- Stir the apple and orange juice into the warm couscous so it becomes lightly sweet and fruity.
- Spoon into a bowl and top with orange pieces, kiwi slices, and a pinch of cinnamon if available.
Good for: A breakfast that uses couscous like a warm grain bowl with bright summer fruit.
Optional: Add cottage cheese on top for extra protein and creaminess.
