Sweet Potato Cheddar Breakfast Toast
Uses: sweet potato, wheat bread, shredded cheddar, margarine
Ingredients:
- 1 small sweet potato, or 1/2 to 3/4 cup cooked sweet potato
- 1 slice wheat bread
- 1 teaspoon margarine
- 2 tablespoons shredded cheddar
Instructions:
- Cook the sweet potato until soft by boiling, microwaving, or roasting.
- Mash the sweet potato with margarine until creamy. Season lightly if desired.
- Toast the bread, then spread the mashed sweet potato over the top.
- Sprinkle with cheddar and warm until the cheese melts.
Good for: A hearty vegetarian breakfast that feels warm, creamy, and comforting.
Optional: Add sliced tomato or a fried egg on top.
