Sweet Potato Cheddar Breakfast Toast

Ingredients:

  • 1 small sweet potato, or 1/2 to 3/4 cup cooked sweet potato
  • 1 slice wheat bread
  • 1 teaspoon margarine
  • 2 tablespoons shredded cheddar

Instructions:

  1. Cook the sweet potato until soft by boiling, microwaving, or roasting.
  2. Mash the sweet potato with margarine until creamy. Season lightly if desired.
  3. Toast the bread, then spread the mashed sweet potato over the top.
  4. Sprinkle with cheddar and warm until the cheese melts.
