Sweet Potato, Mushroom & Egg Breakfast Hash

Uses: sweet potato, mushrooms, red onion, egg, shredded cheddar, margarine

Ingredients:

  • 1 small sweet potato, diced, or about 3/4 cup cooked sweet potato
  • 1/2 cup sliced mushrooms
  • 1 tablespoon diced red onion
  • 1 teaspoon margarine
  • 1 to 2 eggs
  • 1 to 2 tablespoons shredded cheddar

Instructions:

  1. Dice the sweet potato into small pieces so it cooks quickly. Microwave, boil, or roast until tender.
  2. In a pan, melt margarine over medium heat. Add mushrooms and red onion and cook 3 to 5 minutes, until softened and fragrant.
  3. Add the cooked sweet potato to the pan and warm everything together. Season with black pepper, garlic powder, paprika, or any favorite seasoning blend.
  4. Top with a fried or scrambled egg, then sprinkle with cheddar while everything is still warm.

Good for: A hearty, filling breakfast that feels like a small skillet meal.

Optional: Serve with 1 slice of toast on the side, or add a spoonful of salsa if available.
