  • 4 ounces ground beef
  • 1/2 cup diced zucchini
  • 1/3 cup garbanzo beans, rinsed and drained
  • 1/2 cup tomato sauce
  • 1 teaspoon oil
  • Oregano, paprika, garlic powder, black pepper
  • Small amount of salt

Instructions:

  1. Heat oil in a skillet over medium-high heat. Add ground beef and break it into crumbles as it browns.
  2. Add zucchini and season with oregano, paprika, garlic powder, black pepper, and a small amount of salt. Cook for 3 minutes.
  3. Stir in garbanzo beans and tomato sauce. Add 2 tablespoons water and reduce heat to medium-low.
  4. Simmer for 5 to 7 minutes until the beef is fully cooked, zucchini is tender, and the sauce has thickened slightly.

Good for: A hearty one-pan dinner with beef, beans, zucchini, and a savory tomato sauce.

Optional: Serve over brown rice or scoop into a warm tortilla.
