Turkey, Cream Cheese & Crunchy Veggie Toast

Uses: wheat bread, cream cheese, turkey slices, cucumber, tomato, lettuce or red onion
Yield: Approximately 1 serving

Ingredients:

  • 1 to 2 slices wheat bread
  • 1 to 2 tablespoons cream cheese
  • 2 slices turkey
  • 1/4 cup cucumber
  • 2 slices tomato
  • A few pieces of lettuce or a small amount of red onion, optional

Instructions:

  1. Toast the bread until warm and lightly crisp.
  2. Spread cream cheese over the toast.
  3. Layer turkey on top, then add cucumber and tomato.
  4. Add lettuce for freshness or a small amount of red onion for extra flavor, if desired.
  5. Serve open-faced, or top with a second slice of bread to make it a sandwich.

Good for: A fresh, creamy, crunchy lunch that can be made quickly without cooking.

Optional: For a warm version, heat the turkey and toast together first, then add the cream cheese and vegetables after warming.
