Turkey Hummus Rice Bowl
Uses: cooked rice, turkey slices, hummus, cucumber, tomato, lettuce
Ingredients:
- 3/4 cup cooked rice
- 2 to 3 slices turkey, diced or sliced
- 3 tablespoons hummus
- 1/4 cup cucumber
- 1/4 cup tomato
- 1/2 cup lettuce
Instructions:
- Start with warm or cold cooked rice as the base.
- Add turkey, hummus, cucumber, tomato, and lettuce.
- Season the cucumber and tomato with a little salt and pepper, if desired.
- Spoon hummus over the bowl and mix lightly, or keep it on the side as a dip-style sauce.
Chef Tip: This can be served cold as a rice salad or warmed slightly as a bowl.
Optional: Add red onion for more flavor or a little ranch for extra creaminess.
