Turkey Hummus Rice Bowl

Uses: cooked rice, turkey slices, hummus, cucumber, tomato, lettuce
Yield: Approximately 1 serving

Ingredients:

  • 3/4 cup cooked rice
  • 2 to 3 slices turkey, diced or sliced
  • 3 tablespoons hummus
  • 1/4 cup cucumber
  • 1/4 cup tomato
  • 1/2 cup lettuce

Instructions:

  1. Start with warm or cold cooked rice as the base.
  2. Add turkey, hummus, cucumber, tomato, and lettuce.
  3. Season the cucumber and tomato with a little salt and pepper, if desired.
  4. Spoon hummus over the bowl and mix lightly, or keep it on the side as a dip-style sauce.

Chef Tip: This can be served cold as a rice salad or warmed slightly as a bowl.

Optional: Add red onion for more flavor or a little ranch for extra creaminess.
