Ingredients:

  • 1 medium bell pepper
  • 3 ounces ground turkey
  • 1/2 cup cooked jasmine rice
  • 1/3 cup black beans, rinsed and drained
  • 1 teaspoon oil

Instructions:

  1. Heat the oven to 375°F. Cut the bell pepper in half lengthwise and remove the seeds. Place cut-side up in a small baking dish.
  2. Heat oil in a skillet and cook the ground turkey, breaking it into crumbles. Season with cumin, oregano, garlic powder, black pepper, and a small amount of salt. Cook to at least 165°F.
  3. Stir rice and black beans into the turkey. Spoon the mixture into the pepper halves and add 2 tablespoons water to the bottom of the baking dish.
  4. Cover loosely and bake for about 20 minutes, then uncover and bake until the pepper is tender.

Good for: A colorful, comforting stuffed-pepper dinner with a Latin-inspired turkey, rice, and bean filling.

Optional: Top with a little American cheese during the final 5 minutes.
